Paddy Jack’s plans to debut a food truck soon that will serve 10 of its popular gourmet grilled cheese sandwiches.

The 24-foot truck is wrapped and ready to go, but is waiting for some coolers to be installed, said manager Jennifer Hurst, who estimated the truck will be ready to roll by November.

A food truck was actually the original concept for Paddy Jack’s, but that plan was put on the back burner when the chance came to acquire a restaurant location.

“Now that we have our two stores up and running, we’re just excited to put it on wheels like our original thought,” Hurst said.
